With the weather heating up, there's no better time to fire up the BBQ and grill to your heart’s content.


With the weather heating up, there's no better time to fire up the BBQ and grill to your heart’s content. Using an open grill can be a healthy way to cook food as long as it's lean, and doesn't come off too blackened.

It also imparts a unique flavour that compliments many foods. Here are five tasty and healthy BBQ foods you can treat yourself to this summer

  • Prawns – Green prawns cooked over the grill steam in their own shell and taste fantastic. Make sure to trim the legs and whiskers, otherwise they will burn off and make a right mess. Cook for 2-3 minutes each side until the colour changes
  • Fish in foil – Cooking fish in foil helps to infuse flavours, and is a great way for food to retain nutrients. Wet ingredients help create steam to cook the fish, such as lemon juice, soy sauce and white wine. Other great additions include garlic, Asian greens, ginger and shallots
  • <Capsicum – Whether you prefer red, green, yellow or even a combination of all three, there is no better vegetable for cooking on the BBQ than capsicum. The open grill gives the capsicum a smoky sweetness that works well in a warm salad, or as a side dish with lean meats. Drizzle with a little olive oil, and enjoy
  • Mushrooms - The grill works perfectly for mushrooms, because the flavour becomes concentrated as their moisture evaporates. Large mushrooms work best, especially when you stuff the centre with low fat ricotta cheese, sun dried tomatoes and chopped chives
  • Pineapple - Fresh pineapple tastes great cooked on the grill because the sugars in the fruit caramelize, creating intense flavours and a golden brown color. Once cooked, serve as a dessert with a sprinkling of cinnamon and a few spoonfuls of low fat natural yoghurt
