Recipe: Spinach and potato masala

A spinach and potato dish for the whole family.


Ingredients

  • 1 cup fresh, washed spinach
  • 1 large potato - diced
  • 2 small tomatoes - diced
  • 2 tsp sea salt
  • ¼ tsp tamarind extract
  • 3 green chillies - deseeded, minced
  • a large piece of ginger - minced
  • ¼ tsp cumin seeds
  • 1 tblsp olive oil

Method

  1. Cut the washed spinach into little pieces
  2. Mix diced tomatoes, chillies, salt, tamarind extract and ginger in a blender well into a paste
  3. Keep a non-stick frying pan on heat and add olive oil.
  4. When the oil becomes hot, add cumin seeds and fry for 1 minute.
  5. Then add cut spinach and diced potatoes and fry until the potatoes are cooked.
  6. Add the blended mixture and stir well.
  7. Raise the heat to high, cook for 5 minutes.
  8. Remove from heat and serve hot with brown rice.
