Almonds and almond meal are a great source of vitamin E, a powerful antioxidant that is involved in protecting our cells from the oxidative stress that can occur when our body is fighting an infection.

Substitute the honey for rice malt syrup or pure maple syrup.
Ingredients
- 2 cups dried apricots, roughly chopped
- 1½ cups almond meal
- ½ lemon, juiced & zested
- 1 tbsp honey
- 1 cup flaked almonds
How to make
1. Line both the base and sides of a 8cm x 15cm rectangular pan with baking paper.
2. In a food processor or blender, combine the apricots, almond meal, lemon juice, zest and honey.
Blitz until mixture comes together.
3. Transfer to a medium mixing bowl and stir in the flaked almonds. Add mixture to pan and press down firmly. Please leave in fridge for roughly 1 hour to firm. When ready to serve, slice into 14 pieces.
Store in an airtight container in the refrigerator for up to four days.
