Choc Apricot Bites

Our dark chocolate and apricot bites make are a great snack for women on-the-go, perfect to prep on the weekend and enjoy all week long. Dried apricots bring natural sweetness and are a surprisingly rich source of non-haem iron. When paired with high-fibre almond meal, rolled oats and peanut butter, these tasty bites are a good source of both iron and folate, two valuable nutrients to which help to support a healthy pregnancy and post-partum journey. Plus, there is no need to whip out that clunky food processor, this one-bowl recipe means ultimate ease and little washing up, win win!

Dairy Free, Vegan and Vegetarian Suitable

Ingredients 

  • 1 ½ cups dried apricots
  • 1/3 cup boiling water 
  • 1 cup almond meal 
  • ½ cup desiccated coconut 
  • ¾ cup rolled oats 
  • 1/3 cup all natural peanut butter 
  • ¼ cup dark chocolate chips 
     

How to make

1.  Using a sharp knife, very finely chop the dried apricots. Place in a large mixing bowl and add boiling water. Mix well and set aside for 30 minutes to soften. 

2.  Once softened, add the almond meal, coconut, rolled oats and mix well. Stir in the peanut butter and chocolate chips. 
Using wet hands, roll a heaped teaspoon of mixture into a ball. Repeat with remaining mixture to make 22 balls in total. 

3.  Place onto a large plate and refrigerate for 1 hour to firm.

Notes

Store leftovers in an airtight container in the fridge for up to a week
