Gluten free zucchini fritters served with an egg sunny-side up.
Ingredients
- 6x zucchinis
- 2 shallots
- 2 lemons
- 7 eggs (3 for fritters, then 1 per fritter to top)
- 1 avocado
- 3 tablespoons of natural yogurt
- Chives
- Flakey salt
- Pepper
- Ghee or cooking oil
How to make
1. Grate 6 zucchinis
2. Add 1 tablespoons of flaky salt to zucchini, squeeze through zucchini, then leave zucchini in a colander in the sink for the moisture to be drawn out for 15 mins
3. Add finely diced shallots, zest of two lemons and 3 eggs into a mixing bowl
4. Add 1 avocado, 3 tablespoons of yoghurt, juice of 1 lemon, pinch of salt and crack of pepper to a blender and whiz.
5. Chop some chives for garnish
6. After 15 mins, squeeze excess liquid out of zucchini, add to the mixing bowl and mix through
7. Put a teaspoon of ghee or oil into a medium heat pan
8. Shape fritter mixture into a patty, place into hot pan and press down with spatula
9. Cook in pan for approx. 3 mins on either side
10. Take out of pan and repeat with rest of zucchini mixture
11. Once all the fritters are cooked, crack an egg per person (1 at a time) into your pan to fry eggs. Cook for approx. 1-2 mins on one side (if you want easy over, cook for approx 30 secs on second side)
12. Serve fritters with a smear of the yoghurt on top, topped with your egg, a sprinkle of chives and a squeeze of lemon
